TOMATO PIE...........Bake lightly browned deep dish flour pie crust. ______ Cube one XL or two med tomatoes & place in pre-baked deep dish crust. Salt & pepper to taste. Top w/ a few diced onions. (optional) dice a small zuchini & sprinkle on top of onions. ______ Top with 1.5 or 2 cups sharp shredded cheese mixed with a lil bit of mayo (sounds odd huh?) _______ Bake at 350, 25 minutes. Cut while warm. __________________________ Great to take as covered dish, a non-sweet veggie pie.

It sounds delicious, and I'm definitely going to try it soon - maybe as a side with pork chops or tenderloin.

I had leftovers of tomato pie for breakfast with hazelnut coffee, yummy! I suggest Vidalia sweet onions or light scallions bc the onion taste really comes through strong. You can use three cheese shredded blend too, it's milder.

Cammie, I made the tomato pie last night. Followed the recipe but added a bell pepper, diced, with the onion layer. It was very good - we all enjoyed it. I think the zuchini is necessary as it added a lot to the taste. I had mine with iced sweet tea and BBQed chicken breast. Thanks.

Well, Cammie . . . it's been almost a year since you started this thread. In that time, I've made quite a few tomato pies and given the recipe to many, many people. Lots of compliments - no complaints. I've changed a few things - add yellow or orange bell peppers (diced) to the onion and saute them in a little butter before putting them over the tomatoes. Also, sometimes, I substitute frozen chopped spinach for the zucchini - but it's a flexible recipe and is always delicious. Just want to say "thanks". I don't care for Paula Dean's recipes and might never have tried this yummy dish if you had not started this thread.
