TripAdvisor just came out with a list of America's top 10 cities for pizza, and even though New York fell to the number four spot, one of the NYC pizza joints still at the top is the legendary Di Fara pizzeria.
When Dom DeMarco started making pizza 47 years ago, he never dreamed he'd be so successful that customers would wait hours for his pies. But the now-famous Brooklyn pizza maestro says he always had confidence in himself.
Today, New Yorkers and tourists alike continue to flock to his Midwood, Brooklyn pizza mecca, Di Fara. And they do so despite the $5 per slice price, the two-hour waits, the one-hour commute from midtown Manhattan and some run-ins with the Health Department.
Why do they do it? Many say it's the finely calibrated combination of imported ingredients, a super-hot oven and an old-school approach — a formula DeMarco has personally perfected over the years, since no one else has ever made a pie at Di Fara.
Nonetheless, some still question if it lives up to the hype. Watch the video below and decide for yourself if it's worth the trip:
My comments: When you watch the video, toward the end you will see the host eating a slice of the pizza. Notice how thin the crust is, and notice that it doesn't droop toward the point of the slice. The crust is crisp and thin. This is like real Neopolitan pizza in Italy. No mushy crust and no droop.
A big problem with most American made pizza is that they load up with toppings that insulate the top of the crust somewhat from the heat of the oven. If the bottom of the crust is cooked, but the top of the crust is still raw, and the crust is too thick, you get droop. In Italy, and at this Brooklyn place, they know to keep the crust very thin, and to use a very hot oven (700-800 degrees F or 370-400 degrees Celsius). That way the crust will fully bake making it crispy with little or no droop.
The crust is the dog and toppings are the tail, a simple concept that the awful American pizza chains don't understand (yes I mean you Pizza Hut, Dominos, Papa John, Little Caesars, etc.).

It's hard to find a good pizza place. When i moved here, I tried one after the other after the other...and I noticed 1- fake cheese! 2- scarce toppings. So in the end I had to start looking at little independent pizzerias in out of the way places before i finally found an honest man (someone who still follows the old adage "an honest day's work, for an honest day's pay". The guy is NOT making the kind of money Dominoes does, or other chains. But he has a very loyal customer base who always say good things about him. ..I wish the world was still filled with such places, instead of Wal-Marts.

If you come to New Haven there's an area near Rosa Delaura's house called Wooster Square.It has Sally's pizza,Pepes pizza and Consigleos all run by Italian families who's founders all came thru Ellis Island many years ago.Sally's and Pepe's always have a line around the corner most nights

I tend to make my own pizza more often than not. The best place I ever discovered for pizza's was a little store our West in B.C., they sold it by the slice and their spicy vegetarian pizza was just amazing.
