Jumbo, don't mess about with these 'mixes'. Start from scratch with flour, raising agent, eggs, sugar and butter - it will taste much better. If you're baking a cake you're best using metal rather than glass or china. that's undoubtedly true, but, a huge but, you're a cook. my girlfriend that died thirteen years ago was the greatest cook in the world, and i used to help her, but, i didn't pay attention. i can put chicken in the oven for an hour and eat it, and i eat a lot of spaghetti with sauce out of a can. when you start talking about baking something from scratch, there's no way i can do it. i once was going to make a cherry pie. i guess the recipe that i found thought you used fresh cherries or something since it didn't say anything about draining the juice out of the can. my cherry soup with a crust didn't taste too good either. Jumbo, it's a shame we live so far apart. I'd bake you a pie any day, just so long as you 'said one for me'. ;D
